If you love Andes Mints, you'll love these cookies! It is actually a mint flavored sugar cookie with chopped up Andes Mints throughout. The dough balls looked like little scoops of mint chip ice cream!
They are good right out of the oven when they are still warm and gooey! Just be sure to not overtake them. I thought I undercooked them, but after they cooled they seemed almost over done, so just watch closely.
2 3/4 cup flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 cup unsalted butter (at room temperature)
1 1/2 cup sugar
1 tsp mint extract
15-20 drops green food coloring
1 bag of Andes mints (chopped)
Preheat oven to 375*
Sift together the flour, soda, powder and salt in a separate bowl.
Beat the butter and sugar together in a large bowl until smooth.
Beat in the egg and mint extract.
Slowly add the sifted dry ingredients.
Chop up the Andes mints into but sized pieces and fold into the dough. (Next time I make these I might use more mints.)
Bake on an ungreased cookie sheet for 7-10 minutes. They will look underdone, but don't worry.
