Ann Romney's Chocolate Cake
Ingredients:
Cake:
1 cup flour
3/4 cup sugar
3/4 cup sour cream
1/2 cup butter, softened
1/4 cup unsweetened cocoa
1 1/2 teaspoons instant coffee (optional)
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1 egg

Cake:

Directions:
- Preheat your oven to 350*F.
- Grease a nine inch round cake pan and then line the bottom of it with parchment paper.
- Beat all of the ingredients together in a large bowl until well blended.
- Pour into your prepared pan and bake at 30 minutes or until a toothpick inserted in the middle comes out clean.
- Let the cake cool and then place on serving plate and spread on fudge topping.
Fudge Topping Directions:
- In a 2 quart saucepan over medium high heat, combine 1 cup heavy cream, 1/2 cup sugar, 2 tablespoons butter, and 4 ounces semisweet chocolate and bring to a boil, while stirring constantly.
- Reduce to medium heat and cook for 5 more minutes, still stirring constantly.
- Remove from heat and add 1 teaspoon vanilla.
- Place the pan in a big bowl of ice and water and stir the fudge until it is spreadable.
- Optional: Stir in a 7 ounce jar of macadamia nuts.
