This is just a classic chocolate chip cookie recipe. They are soft and fluffy and you can't eat just one! 😃🍪
I decided to do half mini M&M's and half chocolate chips, yum!
3/4 cup unsalted butter, softened (1 1/2 sticks)
3/4 cup light brown sugar, packed
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
one 3.5-ounce packet instant vanilla pudding mix (not sugar-free and not 'cook & serve')
1 teaspoon baking soda
pinch salt, optional and to taste
one-12 ounce bag (2 cups) semi-sweet chocolate chips
Cream the butter, sugars, egg and vanilla in the bowl of a stand mixer.
Scrape down the sides and add the flour, pudding, soda, and salt. Beat until just combined on low speed.
Use a cookie scoop to form cookie balls and put on a cookie sheet in the fridge for two hours.
Bake on a greased cookie sheet for 9-11 minutes, being sure not to overbake.
