This is a great coffee cake recipe for the morning or as an afternoon snack. It kind of tastes like a cinnamon roll 😃
1/3 cup packed brown sugar
2 teaspoons cinnamon
1 package yellow cake mix
1 3.4 oz vanilla instant pudding
3/4 cup vegetable oil
3/4 cup water
4 large eggs
1 teaspoon vanilla
Preheat oven to 350*
Spray a bundt pan with oil then dust with flour.
Mix cake mix, pudding, oil, water, eggs, and vanilla in a large bowl until thick and smooth.
Mix together the brown sugar and cinnamon in a separate bowl.
Pour 1/3 if the batter in the bundt pan.
Sprinkle 1/2 the cinnamon filling. Repeat and then pour the remaining third of the batter on the top.
Bake for 50-60 minutes.
Top with a glaze if 1 cup powdered sugar, 2 tablespoons milk and 1/2 teaspoon vanilla.
