Key Lime Torte
This was what was left after my family and my uncle and his family had at it. This cake is my dad's favorite cake! My grandma also likes it. You are supposed to make it fancier by splitting it into four layers, but I was afraid of them breaking apart, so I just left it in two layers. The cake is heavy and has light frosting.
Ingredients:
Cake-
1 pkg. yellow cake mix
2 tablespoons lime juice plus water to equal one cup
1/2 cup butter, softened
3 eggs
Frosting-
14 oz. can sweetened condensed milk
1/2 cup lime juice
2 cups whipping cream

Directions:
- Preheat oven to 350*F. Grease and flour two 9 inch round cake pans.
- In a large bowl combine all cake ingredients at a low speed until moistened and then beat for 2 minutes on high speed. Pour batter into pans and bake for 20-30 minutes. Cool for 15 minutes in pans, then remove from pans and let cool completely.
- In a small bowl, mix together the lime juice and sweetened condensed milk.
- In a large bowl, beat the whipping cream until stiff peaks form.
- Fold lime juice and milk mixture into the whipping cream just until blended. Frost the cooled cake.
- Optional: Garnish with lime slices on top.
