Scones
Ingredients:
3 cups flour
1/2 cup granulated sugar
zest of 1 lemon
1 teaspoon baking powder
1 teaspoon baking powder
1/4 cup cold butter, cut into small cubes
1 cup buttermilk
1/4 cup unsweetened applesauce
1 cup fresh or frozen blueberries
Glaze:
2 tablespoons lemon juice
3/4 cup powdered sugar
Directions:
3 cups flour

1 cup fresh or frozen blueberries
Glaze:
2 tablespoons lemon juice
3/4 cup powdered sugar
Directions:
- Put all but one tablespoon of the three cups of flour in a large bowl.
- Add in the sugar, lemon zest, baking powder, baking soda, and 1/2 teaspoon salt with the flour.
- Cut in the butter with a pastry blender until fine crumbs are made.
- In a separate bowl, combine the buttermilk and applesauce and gradually mix with the dry ingredients, gently stirring until a dough is formed.
- Toss berries with the reserved one tablespoon of flour and gently fold into the dough. Divide into 2 halves.
- Flour a clean and smooth surface and your hands. Press dough into 2 rounds each about 1 inch thick. Cut each rounds into six equal pieces and space them equally on parchment paper lined baking sheets.
- Bake 15-18 minutes at 400*F.
- Whisk glaze and drizzle over the top of warm scones.
