These are yummy and also great for spring. They are also great because you could substitute the strawberry jello for another flavor and make any flavor of cookie that you would like! Just like with all other cookies
3/4 cup butter, slightly softened
3/4 cup brown sugar
1/4 cup sugar
2 teaspoons vanilla
1 (3.4 ounce) box cheesecake instant pudding mix (dry)
1 (3 ounce) box instant strawberry Jello mix (dry)
1 teaspoon baking soda
2 cups flour
1 cup white chocolate chips
Preheat oven to 350 degrees and line a cookie sheet with parchment paper.
In a large bowl cream together the butter and sugars.
Add the eggs and vanilla and mix together.
Add the cheesecake pudding mix and strawberry Jello mix and combine.
Add the baking soda and flour and mix until combined. Mixture will be thick.
Gently stir in the white chocolate chips.
Bake on the middle rack for 8-9 minutes. They might not look done but they will continue to set while cooling. Remove from the oven and let cookies cool on the cookie sheet.
